Quesadilla (Read as Keisadiya)

quesadilla (play /ksəˈdə/Spanish: [kesaˈðiʝa]) is a flour tortilla or a corn tortilla
filled with a savoury mixture 
containing cheese and other ingredients, 
then folded in half to form a half-moon shape.[1] This dish originated in Mexico,
and the name is derived from the 
Spanish word for cheese queso.[2]

Serves - 2-3
Ingredients:

  • Ready made Tortilla wraps (can be found easily in supermarkets / grocery stores) 
    • Comes in a pack of 6-8 tortillas, for this recipe I used 3 tortillas.
  • Olive oil- 1tbsp
  • Onion- 1 large
  • Tomato - 1 large hard
  • Capsicum - 1 large
  • Green chilli- 1 small
  • Pepper - 1 tsp
  • Chilli flakes - 1 tsp or more if you have a bend for spiceyyyyy :P
  • Salt to taste
  • Basil - 1 tsp
  • Cheese cube - 2 (grate cheese cube using grater)
  • I also used some left over Italian dressing which i got along with home
    delivered pizza 
    from pizza hut :D

In case its there go ahead make use of it else you can use oregano if 
available with you or nothing at all as well, dish will still be tasty :)


Method for filling:
  • Chop onion, capsicum, tomato (soft part inside with seeds is removed first,
    else it will make the filling soggy) 
    as shown in image.
    

  • In a pan add olive oil, olive oil is very mild and should not be over heated,
    in 30 seconds, add onion, saute for 1 minute.
  • Now add Capsicum and saute for a while do not put lid as it will remove
    crunchiness of veggies.
  • After 2 minutes, add pepper, half of the chilli flakes, salt, half of the basil
    (we are keep remaining half to be added after
    adding tomatoes)
  • Add oregano/italian dressing, mix well.
  • Add tomatoes and mix.
  • Now add left over chilli flakes, basil & mix well.
  • Saute for 2-3 minutes and your filling is ready.

Method to make Quesadilla
  • Take a nonstick tawa and heat, keep flame to medium and put the
    tortilla on hot tawa.
  • Flip it once after 30 seconds.
  • Add filling on half side of the tortilla as shown in image and add
    grated cheese on top.
    
  • Fold tortilla into half and let it heat.
  • Be careful as you now need to flip this filled tortilla on the other side,
    let the flame be on medium only so that you 
    don't accidently burn it.
  • Once crisp and brownish on both sides, take off the tawa and cut into
    triangles as shown below
    .


Serve hot with Tomato salsa or Ketchup :)

    I made this recipe yesterday during wine and cheese party @ our home. It was a hit and people liked it very much. I got fresh basil leaves from the market which gave the true aroma to the whole recipe. Thanks for sharing it :)
