Garma Garam Gobhi Paratha

Serving: 3-4 people

Ingredients:

For Stuffing:
  1. Cauliflower (Phool Gobhi) – 1 medium
  2. Onion (optional) – 1 small
  3. Ginger – small piece grated
  4. Chat masala (optional)
  5. Salt – to taste
  6. Red chilli - as per spicy intake capacity :)
  7. Coriander leaves chopped
  8. Green chilli, finely chopped – 1 small
  9. Garam masala – 1 tsp

For Paratha
Wheat flour – 3 cups
    Water as per measurement to make dough

Method
Chef's tip: In gobhi paratha it’s better to knead the dough with salt mixed in it, since if you add salt to gobhi masala (which will be filled in flour balls, it will make gobhi leave excess water and make it difficult to roll it to a paratha)
    
  1. Grate cauliflower using grater (kaddukas) & keep aside
  2. Add salt to wheat flower and knead wheat flour into dough, not very soft so that it is easier to roll parathas.
  3. Once dough is ready, leave it aside (you can cover with a wet cloth if desired, it will keep the dough moist) and take grated cauliflower and add all ingredients mentioned under “For stuffing”. Gently mix all stuffing using hand so that all spices are uniformly mixed.
  4. Create 8-10 medium size balls of dough In which we will fill stuffing.
  5. Take each ball, using your thumb and fingers; create a bowl kind of shape.
  6. Fill decent amount of stuffing so that on closing the dough bowl stuffing doesn’t come out.
  7. Using plain, dry flour to be wrapped around stuffed dough balls so that you can roll it easily into parathas.
  8. Roll out stuffed dough ball into around 6” diskette.
  9. Heat a tawa, place paratha over it. Turn over once & spread some oil around it. Turn over again and spread a little more oil on the other side.
  10. Cook till both sides are well cooked.
  11. Serve hot with fresh yogurt / Butter & pickle of your choice.
