Here is a step by step recipe for making aloo tikki chaat, one of the most favorite evening snacks for many, specially the north indians :)
There are several items to be prepared independently in order to come up with this yummy treat, follow my steps n lets do some good to your taste buds :)
Serves: 3-4
We need to prepare following:
- Aloo tikki
- Curd
- Imli chatni
- Green chatni ( if desired)
- Peas filling for tikki
Imli chatni(sweet chatni)
Cooking Time: 15-20 minutes
Ingredients
- Imli 50gm
- Jaggary (gud) 100gm
- Black salt(rock salt) 1 tsp
- Red chilli powder 1tsp
- Pepper 1 tsp
Method
- Soak imli in normal water just enough to wet it, for 3 hours.
- After 3 hours, mash imli as it becomes softer and remove hard seeds and reshe(threads like stuff), you can use a strainer as well with slightly bigger holes so that you don't waste the soft pulp during straining.
- Cut jaggary into smaller pieces, add these to imli pulp.
- Take a kadhai, add this mixture of imli pulp & jaggary and heat on medium flame for 10-12 minutes. If mixture looks too thick after heating add little water n mix well, heat for 2 more minutes, you can add more jaggary if you want it sweeter.
- Now add red chilli, rock salt and pepper.
- Mix well and keep aside to cool.
- Your imli chatni is ready :)
Curd.
Cooking Time: 5-10 minutes
- Take 200 gms of curd, beat to fine consistency by adding water if desired.
- Add little pinch of salt, roasted cumin powder , pinch of red chilli powder.
- Mix well, curd is ready, keep in fridge till rest of stuff is ready.
Peas stuffing
Cooking Time: 10-15 minutes

- Fresh peas 1 katori (100 gms) if you have frozen peas, boil them once to make them little softer.
- Ginger -grate a small piece of ginger around 1.5 inch :)
- Cumin 1 tsp
- Coriander leaves finely chopped
- Oil 1 tbsp
Method
- Take kadhai heat it, add oil
- When oil is hot add cumin seeds.
- Add ginger, pinch of salt.
- Add peas, mix well.
- Let this cook for 5-8 minutes on medium flame.
- Check peas are not hard and are eatable
- Remove from flame and add coriander leaves.
Aloo tikki
Cooking Time: 20-25 minutes
Ingredients
- Boiled potato - 6 medium
- Red chilli powder 1/2 tsp
Method
- Grate/finely mash boiled potatoes.
- Add red chilli powder and make a nice dough.
- Use some oil to grease your hand and take small portion of mashed potato mix.
- Make a ball and make it flat like a disc.
- Now using your thumb and fingers make a slight depression in disc and add 1 tsp peas mixture.
- Roll potato over peas mixture to make stuffed ball. Make it flat and tikki is ready to fry.
- Repeat this to make more tikkis.
- Take a tawa, heat it, add generous amount of oil and fry tikkis till golden brown like shown in picture.
How to assemble chat
- Take a serving plate.
- Add 2 pieces of fried aloo tikki
- Add curd, chatni, as per your liking of sweet sour flavour of chaat.
- Garnish with a pinch of red chilli powder, roasted cumin powder and chopped coriander leaves.
