Serving: 2-3 People
Ingredients:
- Bread: 1
- Cucumber: 1 Medium
- Tomato: 2 Medium
- Onion: 1 Small
- Boiled potato: 1-2 (optional)
- Butter / Nutralite / Curd : 80 gm
- Dhaniya chatni (optional): 2 tbsp
- Chat Masala (Catch/ MTR/ Homemade) (If chat masala is not there you can use pepper & salt instead)
- Cheese cube :2 (Optional)
Method
- Cut Cucumber and Tomato in thin round slices. Ensure slices are apptly thin otherwise the sandwich doesn’t set well.
- (If you have boiled potato available -Cut Boiled potato in thin round slices)
- Chop onions in small pieces [We don’t want to add lots of onion hence just small chopped pieces)
- Take butter / Nutralite If just taken out from refrigerator melt it a bit (if doing in Microwave 10 seconds is enough)
- If you are health conscious and avoid butter / Nutralite , follow below steps and use curd instead.
- Hang curd for 20 minutes to get excess water out.
- Add little chat masala / pepper to this and mix well.
- Use this as a spread for bread.
Take a pair of bread slices, Apply Butter / Nutralite / Curd on both slices.- (If you have dhaniya chatni available, spread little dhaniya chatni on top of Butter / Nutralite / Curd)
- On one of the slice, place cucumber on bread.
- (If adding boiled potato add it above cucumber)
- Add tomatoes (Since the sandwich will be later cut into 2 triangles, I try to place veggies in a way that after cutting, both triangles have 3 cucumber and 1 tomato each)
- Add some chopped onions for taste.
- (If adding cheese, grate cheese and place it on top of veggies)
- Add Chat masala / Salt pepper [Please note if using curd mixed with chat masala / pepper then add small quantity of Chat masala / Salt pepper in sandwich.]
- Place the other slice of bread on top of this (with butter facing inward)
- Place on chopping board and cut corners of bread with knife.
- Cut in 2 triangles.
- To garnish add round slices of tomato as shown in picture above, and Vegetable sanwiches are ready to be served.
Tip: Place sandwiches in a hot case. Spread aluminum foil in hot case and close lid after placing sandwiches. This avoids sandwiches to get dry in open air.
Tip: If preparing sandwiches with curd, consume them as soon possible else bread may get soggy in curd.
